Commis Chef

Commis Chef in Ski Miquel Chalet-Hotel

Please note this position is only open to those who hold an EU passport (not a British one) or already have the right to work in France.

At Ski Miquel, we are looking for an experienced Commis Chef who wants to work in a chalet-hotel environment, assisting a Head Chef with providing high quality food for around 50 to 60 guests each week of the season.  This is a full-time position for the winter season.

Our ski holidays include a continental breakfast with hot options, afternoon tea and a 3-course evening meal, with canapés served beforehand and a cheese course afterwards.  We have our own Cookbook with menus pre-planned for the week. You would be responsible for preparing and serving the hot options at breakfast and assisting with all other service, as well as pot washing and cleaning.

This job is ideal for someone who is hard-working and well-organised, as this means you will get lots of time out on the mountain in your free time.

Please note that this position is currently only open to EU passport holders, or those who already have the right to work in the European Union.

The Role

The following is an outline of the principal tasks that are expected of our Commis Chefs:

  • Preparing and serving breakfast on alternate days (working with our Chalet Hosts), the main task being to cook eggs, pancakes, sausages and beans to order from the beginning of service at 8am through until 9am.
  • Assisting the Head Chef with the preparation of the following:
    • Cakes and biscuits for afternoon tea.
    • Pre-dinner canapés.
    • 3-course evening meal for 50 to 60 guests.
    • Children's dinner, where required.
  • Maintaining a clean, safe, and hygienic kitchen, in accordance with HACCP standards.
  • Cleaning the kitchen, cookware, pots and pans.

Our most efficient Commis Chefs do most of their work during the morning and then return to the kitchen later in the afternoon to finish off before the evening service begins.

We do not offer lunch to our guests in our chalet-hotels, so once you have finished your preparation your day will be free, and you should not have to return to work until late afternoon to prepare for the dinner service at 7:30pm.
