At Ski Miquel, we are looking for well-trained and professional Head Chefs who want to run the kitchen in a chalet-hotel providing high quality food for around 25-40 guests each week. This is a full-time position for the winter season, working alongside our Resort/Chalet Manager and Hosts.
Our ski holidays include a continental breakfast, afternoon tea and a 3-course evening meal, with canapés served beforehand and a cheese course afterwards. We have our own Cookbook with suggested menus pre-planned for the week that provide a structure/guide. For example, we try not to repeat items and we always finish the guests' stay with steak on the last night. Your responsibility is to take this to the next level, ensuring the food is cooked and served beyond the expected standard, whilst also remaining in budget. You have at least one other person to assist you in the kitchen, which might be a Commis chef or Chef de Partie, depending on the size of the kitchen.
This job is ideal for someone who is hard-working and organised, as this means you will get the most time out on the mountain in your free time.
Please note that this position is currently only open to EU passport holders, or those who already have the right to work in the European Union.
The Role
The following is an outline of the principal tasks that are expected of our Head Chefs:
- Management of the kitchen team.
- Planning and design of meals for any guests with specific dietary requirements each week.
- Overseeing the planning and preparation of cakes and biscuits for afternoon tea.
- Preparing pre-dinner canapés.
- Preparing a 3-course evening meal for 25-40 guests. This is for 6 evenings each week throughout the winter season.
- Preparing staff meals from leftovers or providing other simple dishes.
- Some weeks there may be children staying in the chalet-hotel, who will usually have a simplified meal earlier in the evening, before the adults have their dinner.
- Maintaining a clean, safe, and hygienic kitchen, in accordance with HACCP standards.
- Ordering stock to ensure you adhere to the set budget in conjunction with the Resort/Chalet Manager.
- Reporting back to the UK team with any issues.
Our most efficient Head Chefs tend to do most of their preparation work during the morning and then return to the kitchen later in the afternoon to finish off before the evening service begins. We do not offer lunch to our guests in our chalet-hotels, so once you have finished your preparation your day will be free, and you should not have to return to work until later in the afternoon to prepare for the dinner service at 7:30pm.
All our staff work as a team, so the Hosts will be able to help with plating up the meals with your guidance and clean the pans, crockery, cutlery, glasses, etc. Cleaning the kitchen and the cookware is the responsibility of the Head Chef, and all the staff should finish work at around the same time. In larger chalets, you will have a Commis Chef to help prepare the food and do the washing up.

Essential requirements:
- Must have a valid EU passport, or must already have the right to work in the European Union.
- Must be able to speak English to communicate with other staff and our guests.
- Chef qualification (NVQ Level 2 or equivalent).
- Capable of cooking for up to around 35 people in one sitting.
- Experience of ordering and stocktaking.
- Experience of working to a budget.
Head Chef Package
Our Chefs will receive the following as part of their employment package for the 2026/27 winter season:

- One day off per week, with the expectation to do breakfast on the day off once every 5 weeks.

Please note you will be required to bring your own chef whites/blacks and your own set of knives.
